Tikka masala is a curry dish commonly served in Indian restaurants in Europe and North America. It consists of grilled, marinated pieces of chicken in a spiced tomato sauce and is generally considered to be associated with British cuisine. According to a 2001 survey, it was the most popular dish in the United Kingdom. It was probably invented in an Indian restaurant. The dish developed in postwar Britain to reconcile Indian food with British eating habits. Different versions circulate about when and where it originated. According to one widely circulated version, it was created when an Indian or Bengali chef served traditional chicken tikka to an English guest. Because the guest was accustomed to meat generally being served with sauce in British cuisine, the dish seemed too dry to him, so the chef improvised a sauce from tomato soup and Indian spices.
