- Moist dough is pressed through a mold using rollers, cooked in a water bath, and then gently dried.
- Recognizable by its golden-yellow color, rough, porous surface, and firm bite.
- Swabian Knpfle and original Swabian spaetzle are recognized by the EU as a Protected Geographical Indication.
- They may be produced as original products only in Swabia: Baden-Wrttemberg and the Swabia administrative district of Bavaria.
