The roasting process is the next decisive step in producing good coffee after the origin and quality of the green beans. It generally refers to the dry heating of green coffee, during which the beans are refined and develop their unique aroma and appearance. Like good wine, coffee contains an extremely broad range of aromatic compounds: up to 1,000 of these compounds combine to create a flavor profile unique to each coffee. The right technique is just as important as extensive experience in bringing out each coffees finest aromas. Coffee roasting is such a specialized craft that championships are even held for it. During roasting, the bean gradually changes from its original yellow-green color to the typical brown, while the internal water pressure causes it to expand to twice its original size. The heat breaks down and transforms carbohydrates together with free amino acids and proteins, creating a vast spectrum of aromatic and bitter compounds. Temperature and duration are crucial during roasting: the longer the roasting process, the more complex aromatic compounds can develop. Gentle, long-duration roastingover 20 minutes at a maximum of 200Chelps break down harsh tannic acids and creates a particularly gentle, aromatic coffee. Ingredients: 100% roasted coffee.
