Pu-erh tea is one of China's oldest types of tea. It can be consumed immediately or aged for many years. Today, Pu-erh teas are often classified by year and region, similar to wine vintages. Pu-erh tea leaves develop a richer flavor during the aging process. How to brew Pu-erh tea: 1. Rinse the teacup and teapot with hot water. 2. Use approximately 58 g of tea leaves (23.5 teaspoons) per 225 ml of water. 3. Steep the leaves for 1 minute during the first and second infusions in hot water at 100C. 4. Gradually increase the steeping time and temperature for subsequent brews. 5. Refill when the cup or teapot is still one-third full. Storage: Protect the tea from moisture and unusual odors, and keep it at a low temperature. The flavor and color of Pu-erh tea change when it is properly stored over time. Fresh raw tea brews to a bright, yellowish infusion with a strong, almost astringent flavor; aged raw tea brews to an amber-colored infusion with a mild flavor. Fresh ripe tea brews to a bright red infusion with a soft flavor, while old ripe tea becomes dark red with a thick, mild flavor. With proper storage, the flavor, quality, and value of Pu-erh tea continually increase over time.
