• STORY: In Banyuls-sur-Mer in southern Roussillon, more than 750 winegrowers produce wines from the AOC Collioure and Banyuls appellations for Cave de l'Abb Rous. The winery is named after priest Franois Rous, who sold Banyuls in bottles in the late 19th century to help finance his church. Jean-Marc Lafage has led the winery since 2019, further improving its quality. The portfolio includes dry white and red wines as well as the distinctive Banyuls fortified wine.
• AGING: Fermentation takes place in stainless-steel tanks at controlled temperatures. After this phase, the wine ages for several months in oak barrels.
