This tea has particularly large leaves. The fourth to sixth leaves are used. The leaves are first dried and then flavored. For this, they are placed on a hot iron plate and roasted. The leaves are then placed on bamboo trays over a fire made from fresh, resinous conifer branches. This creates dense smoke, which smokes the tea leaves. Lapsang Souchong is also called Zhengshan Xiao Zhong and is one of the most distinctive Chinese black teas, full of woody pine-smoke and tobacco notes. Its memorable, invigorating infusion has a long-lasting smoky finish.
