Product: Genuine cinnamon. Latin name: Cinnamomum zeylanicum. Plant family: Lauraceae. Other names include Sri Lanka cinnamon, true cinnamon, sweet wood, cinnamon, dalchini, canela, cannelle de Ceylan, kanel, cannella, qurfa, kanell, Ceylonski cimet, seiron-nikkei, koritsa, korytsya, and cy qu. These Ceylon cinnamon sticks have irregular shapes, as shown in the photos, and may measure between 1 cm and 7 cm. Genuine cinnamon comes from the bark of an evergreen tree native to Sri Lanka and India that reaches a height of 8 to 20 meters. The leaves are stalked, entire, medium green, paler green underneath than on top, leathery, oval-shaped, and up to 18 cm long. Young leaves are paler green with a reddish tinge and have 35 longitudinal veins. The six-petaled flowers are approximately 3 mm in diameter, light yellow-white, and grow in panicles measuring 57 cm long. The flowers develop into fleshy, oval fruits that are black when ripe and measure 1.52 cm. Allergen information: Cinnamon contains a naturally occurring source of salicylates and is best avoided by people following a salicylate-free diet. Recommended use: Add cinnamon to sweet or savory dishes; sprinkle it into bread, cookie, cake, and muffin recipes; add it to curry powder blends; or stir it into soups, stews, and tagines. It can be used with lamb and beef. Add it to crumbles and fillings for apple and pumpkin pies, or sprinkle it over porridge, muesli, and pancakes for a sweet, spicy flavor. It can also be mixed with butter to make cinnamon toast. Try the butter on toasted teacakes and flatbread.
