Product description Cloves are the dried flower buds of the clove tree. They have a slightly hot taste and an exceptionally intense aroma due to their high essential oil content of up to 25 percent. Use them sparingly, as they can easily overpower other spices. Cloves season gingerbread and are indispensable in mulled spirits and Feuerzangenbowle, a traditional German flaming punch. Cloves have an intense fragrance with peppery and camphor notes. Their flavor is fruity as well as hot, peppery, and bitter, leaving a numbing sensation on the palate. As with allspice, their characteristic flavor is determined by eugenol in the essential oil. Uses: Cloves are an ideal accompaniment to sauerbraten, game, and fish dishes. Lentils, red cabbage, desserts, compote, pastries, punch, and mulled wine also gain their distinctive aroma from the addition of cloves. Storage: Store cloves in a cool, dry place, ideally in an airtight container, to preserve their intense aroma for as long as possible.
